粋庵(Suian)

Food culture

Soba made every morning by a shop owner who loves local sake in Nara.

On weekends and holidays, soba may sell out early, so be quick.

It’s easy for a single customer to enter, and you can easily enjoy soba.

Every morning, my husband makes 28 buckwheat noodles using buckwheat flour from Akita prefecture, which has the umami and sweetness of the buckwheat itself.

The noodles are shredded and have a moderate elasticity, making them a smooth soba noodle.

The lunch-only “Imai Zen” is a popular menu that bears the name of the town.

Morisoba or Kake soba comes with side dishes such as shrimp tempura, simmered seasonal vegetables, and tofu.

There are several types of local sake from Nara carefully selected by the owner, and you can enjoy them at night with a dish made from seasonal ingredients.

I introduced it briefly, but when you actually come to the site, you can experience the history and tradition more concretely with the locals.
